Mulberry and White Chocolate Muffins


It's been a while since I've posted a recipe so here's a good one for some yummy muffins I made today.

1 cup of mulberries (or any fresh/frozen berries of your choice)
A handful of white choc chips
3 cups self raising flour
3/4 cup caster sugar
125g butter, chopped coursely
1/2 cup milk
2 eggs

Preheat oven to 200C. Grease 12 hold muffin tin.

Sift flour and sugar into a large bowl. Rub in butter with fingertips.

Add berries and choc chips.

Place milk and eggs in medium jug and mix using a fork. Add to flour mixture. Mix using fork until ingredients are just combined (don't over mix). Mixture should be coarse and lumpy.

Divide into prepared muffin tin and bake for 20 minutes or until browned.
